En programas de virtualización para mac tienes:

Parallels (de pago)
VMWare (de pago)
VirtualBox (GPL) http://www.virtualbox.org/

Puedes probar éste último y, si te funciona bien Ubuntu (a mi no me dio problemas hace un par de meses, con la 7.04), seguir con ello.
